Blueberry Lemonade Ice Pops

It has been unbearably hot out, and we have no ac. I have to get creative when it comes to beating the heat. One of the easiest (and most delicious!) ways of doing that is by making homemade ice pops!

Homemade ice pops take mere minutes to make and can be SO MUCH healthier for you than store bought. And in the end, more cost effective, too! Flavor options are limited only by your imagination and taste buds.

Blueberry Lemonade Pops (adapted from this  recipe from Kare on Kitchentreaty)

  • 1 c fresh or frozen blueberries (sub any berry you want)
  • 4 cups water, divided
  • 1/2 c honey
  • 3/4 c lemon juice
  1. Throw your berries, juice, honey, & 2 cups of water in a blender, blend well. Carefully mix in the remaining 2 cups (Don’t make the mistake I did! Make sure your blender has the capacity for that, if not you can easy combine in a pitcher).
  2. Fill your molds.
  3. Freeze.
  4. Enjoy.

Easy right?! You can make ice pops from kool aid, cooled tea or coffee, fruit, whatever the heck you want. I love to use cucumber/lemon/mint infused water (soooo refreshing!).

I used this kit. It’s enough to make 150 icepops! The bags are super easy to fill using a funnel,  easy to seal and don’t leak. I love that it includes pop koozies to keep your hands from freezing! Soon I will fill the bags with yogurt for a Gogurt type snack- that would be perfect for kids lunchboxes this upcoming school year or for taking along on car trips & picnics this summer.
